Recipe of the Week: Dark Roasted Peanut Butter Pancakes
Pancakes are one of the ultimate weekend breakfast indulgences. They are also super versatile, as you can top them with whatever you like: fruit, or maple syrup and icecream for the kids! This delicious recipe makes pancakes accessible for everyone as it it gluten free, dairy free and vegan.
Ingredients:
Serves: 2-3
- 1 cup oat flour
- 1/2 cup almond meal
- 2 Tbsp coconut sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp vanilla
- 2 Tbsp Mayvers dark roasted peanut butter
- 3/4 cup almond milk
- 1/2 ripe mashed banana
- 1/2 tsp coconut oil (for pan)
Method:
1. Combine dry ingredients in a bowl, then add the wet ingredients. Stir to combine.
2. Heat a pan over medium heat and add coconut oil, spoon batter in the pan, cook for 2 minutes either side.
3. Top with your favourite toppings

The best advice my mum gave me…
We threw the question out to our Facebook community:
We were astounded by the response – these guys certainly have some wise mummas! The answer that came up the most frequently was “treat others the way you want to be treated”, which is one of our favs. However, there are so many other gems here that are too good not to share, so here’s the list!
Challenge: Pick and follow a different piece of advice from the below list everyday this week and see what happens:-)
- This too will pass
- Treat others the way you wanted to be treated.
- Don’t rely on a man
- To not sit back and wait for adventure to come to you. Make it, seek it out and treasure every moment of it.
- To be grateful for the good things in your life because there are so many less fortunate.
- Love the skin ur in – embrace each day and dance like no one is watching.
- You should treat others how you want to be treated.
- What energy you put it is what you will receive back, be positive.
- Never look a gift horse in the mouth : always be grateful.
- Nothing stays the same, be it good or bad xo
- Aon’t judge a book by its cover, it’s been good advice and helped me through life
- Always do your best whatever you’re doing.
- Always wear clean knickers 😀
- Always tell the truth, be true to yourself, don’t dwell on the past and work hard for what you want.
- Be yourself & don’t care what other say u need to love yourself before other can love u
- Smile at people it makes them feel nice and you feel nice
- Never take anything for granted because we only live once

- What others think of you is none of our business.
- Nobody is better than me, and I’m not better than anyone else.
- Let my belief in myself be bigger than my fears. (it’s always been wonderful to know she believes in me too).
- Learn how to cook, she would say the way to a man’s heart is through his stomach.
- Trust your instincts
- It’s ok to cry, its ok to be scared. It’s ok to ask for help. And to smile, laugh, love and BREATHE.
- If you are going to do a job then do it well.
- Be kind to everyone
- Love yourself before you can love someone else
- Soap is cheap. There’s no excuse for being dirty.
- I’ve learnt to have personal pride while always adhering to my ethics and morals
- Never judge a book by it’s cover and always treat people as you want to be treated.
- Never bully but always stand up for people are being bullied.
- If you have nothing nice to say, don’t say anything at all!
- Never give up, and keep trying for what you want in life.
- Treat EVERYONE with respect because they may be fighting a battle you know nothing about.
- You can’t get respect until you give it first
- Never go to bed angry, you wont be able to sleep and you’ll be even crankier the next day
- Go anywhere but always take your brains with you
- When life gives you lemons it’s upto to make them sweet
- Be strong and confident and follow your heart if you have to stop and think you are on the wrong path.
- Always make sure you have money on you to get yourself home safely!
- Study hard and relax later.
- If something ain’t broke don’t try to fix it
- Always wear clean knickers
- Every cent counts, make sure your compare before purchase…thus making me the bargain queen today
- Treat elders with respect
- Do unto others as you would have them do to you.
- Think before I speak. It’s served me well
- Be yourself. Life is too short to spend time trying to be someone you’re not.
- Cook from the heart! – I am now a chef:-)

Mother’s Day Recipe: San Telmo Rudderfish Ceviche
San Telmo is an Argentinian fine dining institution based in Melbourne, and its Rudderfish Ceviche is a crowd-pleaser. Lemon cured rudderfish is the key ingredient in this recipe, prepared with chilli, sweet potato and onion. The dish is easy to prepare and plate at home – perfect for those who would like to prepare a fabulous lunch for their mum’s for Mother’s Day.
Ingredients:
Serves five
Juice
– 1/2 tsp table salt
– 1/4 red onion thinly sliced
– 1 tsp grated ginger
– 250ml lemon juice
Ceviche
– 20 leaves coriander or micro coriander leaves
– 10ml extra virgin olive oil
– 25g red chilli finely sliced
– 300g Rudderfish or any white fish
– 100g sweet potato peeled and cut into tiny cubes.
Method:
1. Place the salt and thinly sliced onion in a bowl and mix
2. Leave to rest for 10 minutes then add grated ginger and lemon juice and
refrigerate overnight.
3. The next day, strain the juice from onion and store both separately for use
when plating up. The onion should look vibrantly pink
4. In a pot, boil or steam the cubed sweet potato for about four to five minutes
or until cooked through and allow to cool completely
5. Slice the Rudderfish into thin pieces, no thicker than 5mm
Plating up:
6. Place the sliced fish down on a plate (something with a small lip to ensure
the liquid won’t spill) followed by the chilli and sweet potato then top with
the remaining ceviche juice
7. The fish will begin to cure and turn opaque. Garnish with the marinated
pink onions and fresh coriander
8. Finish with a drizzle of extra virgin olive oil
